The question

On Elbaf, the giants turned by the Holy Knights’ Covenant into rampaging demons revert to normal only at fatal damage — “if they die, they stop being demons” (Ch. 1176). Yet Chopper’s plain blows cure the demonic power outright: the dark coating peels and the victims “flip back to white” — “I dunno why… but all I have to do is hit them…” (Ch. 1178). Why do Chopper’s strikes — and seemingly only his — un-make the demons, and what does that make him?

Why it matters

A rules-based counter to Imu’s demonization/Covenant tech, held by the crew’s weakest-seeming member, is classic Oda long-game setup: if the Covenant / Domination suite reappears at scale (Holy Knights, God’s Knights, Imu hosts), Chopper is the on-page answer. Oda flags a mechanic he means to reuse by having a character voice the mystery out loud (“I dunno why…”).
